This Week's Recipe: Easy BBQ Turkey Meatloaf

Easy BBQ Turkey Meatloaf 

Ingredients
    • 1 lb ground turkey, 97% lean
    • 2 eggs
    • 3/4 cup Italian seasoned breadcrumbs
    • 1/2 teaspoon black pepper
    • 2 teaspoons Worcestershire sauce
    • 1/2 cup barbecue sauce (I like Cattleman’s)
    • 1/4 cup parmesan cheese, grated
    • ¼ cup of chopped onions   
    • barbecue sauce, for top
Directions
  1. Preheat oven to 350.
  2. Mix all ingredients together until well blended.
  3. Place mixture into a loaf pan lined with foil and sprayed with nonstick cooking spray.
  4. Spread a layer of BBQ sauce on top of loaf.
  5. Bake at 350 for 45 mins or until internal temperature is 165 degrees or above.
Drain off excess liquid and allow to cool.

Red Wine: A Friend with Benefits

Meet my friend, Merlot.

Many studies investigated the benefits of red wine suggested that moderate amount of red wine (one drink a day for women and two drinks a day for men) lowers the risk of heart attack for people in middle age by 30 to 50 percent. It is also suggested that alcohol such as red wine may prevent additional heart attacks if you have already suffered from one. Wine alters the blood lipid levels. It lowers the total cholesterol count, and raises the high density lipoprotein (HDL) levels. 

Red wine is a particularly rich source of antioxidants.

Resveratrol:  Found in grape skins and seeds, increases HDL cholesterol (good cholesterol) and prevents blood clotting.

Polyphenols in wine:  In short, they lower total cholesterol and blood pressure, lessen risks of cancer, stimulate the immune system, and have anti-bacterial properties.

Flavonoids: Red grapes contain flavonoids, also powerful antioxidants that work as cancer preventives and work to prevent blood clotting.

Anti-stress: Wine does have a calming influence (You think?). The fact that a dinner is accompanied by a drink which helps the body relax and unwind can help the mental transition between work and relaxation. Also, people fighting other illnesses can combat them better when calm and focused.

This Week's Recipe: Grilled Peach & Blue Cheese Salad

Grilled Peach & Blue Cheese Salad
Serves 4
  • 1 medium shallot minced very fine
  • 1/3 cup sherry wine vinegar
  • 2 tbsp honey
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon black pepper
  • ¼ teaspoon Kosher salt
  • ¼ to 1/3 cup mild grape seed oil
  • 4 small not overly ripe Eastern Local Georgia Peaches, halved, pitted and threaded on soaked wooden skewers
  • ¼ cup coarse sugar (in the raw is good)
  • 4 cups of B and W Spring Greens
  • 2 ounces broken pecans, toasted in oven at 350 degrees
  • 2 ounces of crumbled bleu cheese
Mince shallot, whisk in vinegar, honey, mustard, salt and pepper in a small bowl.
Add oil and whisk well. Reserve.
Wash and spin dry greens. Chill.
Sprinkle sugar on flat surface and place flat, flesh side of peach skewer on top of sugar.
Grill sugared side down over medium heat on an oiled grill until you get nice char marks.
Remove peaches from skewers carefully.
Toss chilled greens with dressing and divide evenly between 4 plates.
Top with warm peach and sprinkle with toasted pecans and blue cheese.
